Clean out the fridge


For the Clean out the Fridge day we had, our kitchen made penne noodles with tomato sauce.  It was very good.  We used tomato sauce and added a few extra ingredients.  We used garlic, onions, and basil.  We just mixed it into the tomato sauce and put it on the noodles.  If I were to do this again I would cook the noodles for a little longer, but other than that it was very good.  We had no directions or recipe to follow, but we did not need one because it was very simple to make.

Chicken



I have never cut a full chicken before, and it was a process. First off we washed the chicken off and then played it face down. Once it was face down we broke the back and cut it in half. The first 2 pieces we cut were the legs. We had to find the joint and the cut between; we did the same for the wings also. For the thighs we had to find the thinnest section to cut and the cut through the back bone. After that was done we had the breast and the ribs left. All we had left to do was cut the ribs off. This was the hardest thing to do and we had to make sure to be careful not to cut our hands. We choose to keep the breast and make a BBQ chicken pizza!

Make a Meal




Greek Salad

Ingredients

  • 1 red onion, thinly sliced
  • 1 (6 ounce) can pitted black olives
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 large tomatoes, chopped
  • 1 cucumber, sliced
  • 1 cup crumbled feta cheese
  • 6 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 lemon, juiced
  • ground black pepper to taste

Directions

1.      In a large salad bowl, combine the onion, olives, bell peppers, tomatoes, cucumber and cheese.
2.      Whisk together the olive oil, oregano, lemon juice and black pepper. Pour dressing over salad, toss and serve.

Ingredients
  • 1 1/2 pounds ground beef
  • 1 tablespoon Worcestershire sauce
  • 3/4 teaspoon garlic salt
  • 1 teaspoon black pepper
  • 4 slices American cheese (such as Kraft®)
  • 4 hamburger buns, split
Directions
  1. Combine ground beef, Worcestershire sauce, garlic salt, and pepper in a large bowl; mix well. Form 8, thin patties from the beef. Each patty should be slightly larger than a slice of cheese.
  2. Cut each slice of American cheese into 4 equal pieces; stack the pieces. Sandwich one stack of cheese between 2 ground beef patties. Tightly pinch edges together tightly seal the cheese within the meat. Repeat with the remaining cheese and patties.
  3. Preheat a cast-iron or other heavy bottomed skillet over medium heat. Cook burgers until well browned, about 4 minutes. It is common for burgers to puff up due to steam from the melting cheese. Turn burgers and prick the top of each to allow steam to escape; cook until browned on the outside and no longer pink on the inside; about 4 minutes. Serve on hamburger buns.

Fruit salad

Ingredients

  • 2 cups water
  • 1 1/4 cups sugar
  • 3 tablespoons lemon juice
  • 2 tablespoons anise seed
  • 1/2 teaspoon salt
  • 12 cups assorted fresh fruit

Directions

1.      In a small saucepan, combine the water, sugar, lemon juice, aniseed and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Remove from the heat. Cover and refrigerate until chilled.
2.      Strain syrup; discard aniseed. Place fruit in a large bowl; add syrup and toss to coat. Cover and refrigerate until serving. Serve with a slotted spoon.

Crepes

Ingredients

  • Ingredients for the Crêpes
  • 3/4 cup of flour
  • 1 cup of milk
  • 3 large eggs
  • 4 tablespoons of butter
  • 1 tablespoon of sugar
  • 1/4 teaspoon of vanilla extract (optional)
  • A pinch of salt
  • Ingredients for the Fillings
  • Crêpe Suzette: sugar + lemon juice
  • Choco-Banane: banana slices + chocolate sauce
  • Nutty: honey + nuts
  • Be creative and feel free to use the fillings of your choice!

Directions

  1. Steps for making the Crêpe batter:1- Bring the milk to a boil.
    2- Once the milk is boiling add the butter.
    3- In a bowl, mix all the dry ingredients (flour, sugar, and pinch of salt).
    4- In a separate bowl, beat the 3 eggs.
    5- Incorporate the flour mixture into the eggs.
    6- Slowly add the hot milk and butter to the eggs and flour mixture. You will obatin a very liquid batter.
  2. Steps for cooking the Crêpe batter:Note: You will need a non-stick pan preferably reserved for only making crêpes.
    1- Heat the pan on high heat before starting to make the crêpes.
    2- Once the pan is hot, spread the crêpe batter by rotating the pan in a circular motion.
    3- Let the crêpe cook for few minutes in one side before flipping it to the other side. The crêpe should have a golden color.
  3. Final steps:Fill the crêpes with your favorite filling and serve warm. Enjoy!

The crepes we made were very good. This was my first time making crepes and I didn’t know what to expect. We didn’t mix the batter the best so we needed to take some extra time and mix it more. After it was thoroughly we poured it into the pan and we had to make it very thin so we poured just a little bit on the pan. We cooked them very well and everyone did their part to make them taste great!

Pizza

Ingredients

  • 1 (.25 ounce) package active dry yeast
  • 1 cup warm water (110 degrees F/45 degrees C)
  • 2 cups bread flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 2 teaspoons white sugar

Directions

  1. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  2. In a large bowl, combine 2 cups bread flour, olive oil, salt, white sugar and the yeast mixture; stir well to combine. Beat well until a stiff dough has formed. Cover and rise until doubled in volume, about 30 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  3. Turn dough out onto a well floured surface. Form dough into a round and roll out into a pizza crust shape. Cover with your favorite sauce and toppings and bake in preheated oven until golden brown, about 20 minutes.

Wow, that’s all I can say. This pizza was great! I was the only group member pre make the dough, I followed the directions correctly and I made sure the yeast sat for 10 minutes before adding it to the mixture. When the dough sat it was about twice the size as it was before so we added a little more flour and starting to put the topping on. We made sure there was a lot of margarine was in the bottom of the pan so the pizza was nice and golden on the bottom. When the pizza was done the dough was golden brown and very soft, overall a job well done! J

Apple Strudel Oatmeal

 
¼ cup slivered almonds
1 cup oatmeal
2 ½ cups water
½ cup apple, grated
¼ cup raisins
1 tsp cinnamon
1 tsp vanilla
1 tbsp brown sugar
½ cup (approximately) yogurt

Place the almonds in a medium saucepan over medium-high heat. Stir frequently until the almonds are toasted and fragrant, about 3-4 minutes. Set the almonds aside in a small bowl.
Combine oatmeal, water, apple, raisins and cinnamon in the same saucepan.  Bring to boil, reduce to a simmer until desired thickness. Stir in the vanilla and brown sugar.  To serve, divide between bowls, top with 1-2 tbsp of vanilla yogurt and sprinkle with toasted almonds.

This week we cooked apple strudel oatmeal. I was running a little late because the roads were bad on the way home from gym. When I got there my group put everything on the stove mixed the ingredients well and we were moving pretty fast. I don’t think we added enough cinnamon because the oatmeal was pretty plane. Although the oatmeal was well cooked and we make sure everything was safe by turning the handles in. when we added the yogurts it had a little better of taste. It was very easy to make and again our group worked very well together.
